Broccoli Salad

While this broccoli salad's taste does not rival the more common version that features cheddar, mayo, and bacon, it is healthier. The next time that I make it, I think I will add more peppers, and leave out the broccoli. Chickpea and pepper salad with feta dressing would be perfect. We just aren't big fans of raw broccoli, unless it is disguised better. The rest of this was delicious, so if you do like raw broccoli, give this recipe a whirl.


Broccoli Salad with Feta Dressing

1/2 cup nonfat plain yogurt (I used Greek)
2/3 cup crumbled feta cheese
2 tablespoon lemon juice
2 clove garlic, minced
1/2 teaspoon freshly ground pepper
6 cups broccoli florets
1 15 ounce can chickpeas, rinsed
1 red bell pepper, chopped

Mix feta, yogurt, lemon juice, garlic and pepper in a medium bowl until combined.
Add broccoli, chickpeas and bell pepper; toss to coat. Serve chilled.

I bet if you just lightly cooked the broccoli it would be good! It sounds good! I love broccoli, chick peas and feta so I would probably love this!

I like cooked Broccoli. But I like that salad a little bit.

Thank for comment. Yes I remember she talk about open credit. In one website that she said she think her mom put wrong shoes that cause her to fall down when she running.

Fred likes the Greek yogurt, too! I'm not a fan of raw broccoli, though I know it's good for you. But I like chick peas and feta.

I've never seen this recipe before. I like raw broccoli and feta cheese, so I might give this a try!
